Applesauce Pumpkin Muffins


Sean and I have begun refocusing on our nutrition and fitness. We've joined a gym and are working with a trainer (who's the reason we're both cringing with every movement today). We're also following the Eat Clean Diet. I'm on a 1200 calorie diet, and so far it seems to be working. I've dropped a pound in 1/2 a week.

This morning I made Applesauce Pumpkin Muffins (189 calories) from the Eat Clean Diet Cookbook for breakfast. I paired this with some fruit salad that I dipped in organic non-fat vanilla yogurt. Very yummy!

I made some alterations to the recipe based on what I had in my kitchen. Instead of 1/2 c quinoa flour and 1/4 c whole wheat (WW) flour I used all WW flour. And instead of a 1/2 cup of maple sugar flakes, I used less than a 1/4 cup of raw sugar and a splash of organic blue agave sweetener. Next time I'll use more.

YUM. If you can find quinoa flour, that will add more protein to this recipe. I suspect you could even make quinoa flour by whizzing quinoa in the blender. I'm definitely going to try this one...
